Strawberry Shortcake Cheesecake Bars

A delightful fusion of strawberry shortcake and creamy cheesecake in a convenient bar form.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, diced
  • 1 cup whipped cream
  • 1/4 cup strawberry jam

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Line an 8×8 inch baking pan with parchment paper.
  2. Mix graham cracker crumbs with melted butter and press firmly into the bottom of the prepared pan.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla.
  4. Pour cheesecake mixture over the crust. Bake for 25-30 minutes until set. Cool completely.
  5. Spread strawberry jam over cooled cheesecake layer. Top with diced strawberries.
  6. Spread whipped cream over strawberries. Chill for at least 2 hours before slicing into bars.

You can customize the seasonings to taste.
