- 16 ounces Italian sausage, cut into 1-inch rounds
- 1 pound potatoes, peeled and chopped into bite-sized pieces
- 1 pound fresh green beans, trimmed
- 1/3 cup onion, diced
- 1 garlic clove, minced
- 1 cup chicken broth
- 1 1/2 teaspoons Italian seasoning
- 1 teaspoon salt
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
Instructions
- Add all ingredients to the slow cooker and stir to mix well.
- Cover and cook on HIGH for 2-3 hours or LOW for 4-6 hours, until potatoes are fork-tender and sausage is heated through.
- Stir gently before serving hot.
Notes
Use smoked or precooked Italian sausage for best results, as it only needs to heat through. Fresh green beans provide the best texture; add them later if cooking on low to avoid over-softening. For extra flavor, garnish with Parmesan cheese or fresh herbs.
