Refreshing Corn Salad

Ingredients

  • 4 large ears of fresh corn, shucked (approximately 4 cups or 20 oz of kernels)
  • 1 generous cup of halved cherry tomatoes
  • 1 cup chopped english cucumber
  • 1/3 cup chopped red onion
  • 2/3 cup crumbled feta cheese
  • 3 tablespoons freshly chopped parsley
  • 2 tablespoons freshly chopped basil
  • 1/4 cup olive oil
  • 1 1/2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 1/2 teaspoons honey
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon each of salt and freshly ground black pepper
