- 1 cup unsalted butter, melted
- 2 cups granulated sugar
- 4 large eggs
- 1 tablespoon vanilla extract
- 3/4 cup unsweetened cocoa powder
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 6 oz dark chocolate (60-70%), melted and slightly cooled
- 1 1/2 cups semi-sweet chocolate chips
- 1/2 cup heavy cream
- 4 oz semi-sweet chocolate, chopped (for ganache)
Instructions
- Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper, leaving overhang on the sides.
- In a large bowl, whisk together melted butter and sugar until smooth and glossy.
- Whisk in eggs one at a time, then stir in vanilla extract.
- Sift in cocoa powder, flour, salt, and baking powder; fold gently until just combined, being careful not to overmix.
- Fold in the melted dark chocolate until the batter is evenly rich and shiny.
- Fold in 1 cup of the chocolate chips, reserving the rest for topping.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Sprinkle the remaining 1/2 cup chocolate chips evenly over the surface.
- Bake for 28-32 minutes, until the edges look set and a toothpick from the center comes out with a few moist crumbs.
- While the brownies bake, heat heavy cream in a small saucepan until just simmering, then pour over chopped chocolate in a bowl. Let sit 2 minutes, then stir until smooth to make the ganache.
- Remove brownies from the oven and let cool in the pan for 15 minutes, then drizzle the warm ganache evenly over the top.
- Let brownies cool completely, at least 1-2 hours, before lifting out and slicing into squares.
Notes
Store in an airtight container at room temperature for up to 4 days, or refrigerate for up to a week. Brownies also freeze beautifully for up to 2 months; thaw at room temperature before serving. For extra-clean slices, chill the pan for 30 minutes before cutting.
