Quadruple Chocolate Brownies – Easy Cozy Fall Dessert

Rich, fudgy quadruple chocolate brownies made with cocoa powder, melted dark chocolate, chocolate chips, and a glossy chocolate ganache swirl.

  • 1 cup unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 6 oz dark chocolate (60-70%), melted and slightly cooled
  • 1 1/2 cups semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 4 oz semi-sweet chocolate, chopped (for ganache)

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper, leaving overhang on the sides.
  2. In a large bowl, whisk together melted butter and sugar until smooth and glossy.
  3. Whisk in eggs one at a time, then stir in vanilla extract.
  4. Sift in cocoa powder, flour, salt, and baking powder; fold gently until just combined, being careful not to overmix.
  5. Fold in the melted dark chocolate until the batter is evenly rich and shiny.
  6. Fold in 1 cup of the chocolate chips, reserving the rest for topping.
  7. Pour the batter into the prepared pan and smooth the top with a spatula.
  8. Sprinkle the remaining 1/2 cup chocolate chips evenly over the surface.
  9. Bake for 28-32 minutes, until the edges look set and a toothpick from the center comes out with a few moist crumbs.
  10. While the brownies bake, heat heavy cream in a small saucepan until just simmering, then pour over chopped chocolate in a bowl. Let sit 2 minutes, then stir until smooth to make the ganache.
  11. Remove brownies from the oven and let cool in the pan for 15 minutes, then drizzle the warm ganache evenly over the top.
  12. Let brownies cool completely, at least 1-2 hours, before lifting out and slicing into squares.

Notes

Store in an airtight container at room temperature for up to 4 days, or refrigerate for up to a week. Brownies also freeze beautifully for up to 2 months; thaw at room temperature before serving. For extra-clean slices, chill the pan for 30 minutes before cutting.
