Pumpkin Spice Gooey Cake with Cream Cheese Frosting

For the Crust:

  • 1 box yellow cake mix
  • 1 cup canned pumpkin puree
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar
  • 1/4 cup milk
  • 1/2 tsp cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. In a large bowl, mix cake mix, pumpkin puree, melted butter, eggs, vanilla, and pumpkin pie spice until well combined. Spread batter evenly in the pan.
  3. Bake for 25-30 minutes, until edges are set but center is still slightly gooey. Let cool completely.
  4. For frosting, beat cream cheese until smooth. Gradually add powdered sugar, milk, and cinnamon, beating until creamy. Spread over cooled cake.
