No-Bake Vegan Blueberry Chia Seed Pie

A refreshing, healthy dessert with a nutty crust and a vibrant blueberry chia seed filling that sets perfectly without baking.

For the Crust:

  • 1 cup almonds
  • 1 cup pitted dates
  • 2 cups fresh blueberries
  • 1/2 cup chia seeds
  • 1 cup coconut milk
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

1. Prepare the Crust:

  1. Blend almonds, dates, and salt in a food processor until crumbly and sticky. Press firmly into a pie dish to form the crust.
  2. In a blender, combine blueberries, coconut milk, maple syrup, and vanilla. Blend until smooth.
  3. Pour blueberry mixture into a bowl, stir in chia seeds, and let sit for 10 minutes. Pour over crust and refrigerate for at least 4 hours or until set.
