For the Crust:
- 1 cup almonds
- 1 cup pitted dates
- 2 cups fresh blueberries
- 1/2 cup chia seeds
- 1 cup coconut milk
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- Pinch of salt
Instructions
1. Prepare the Crust:
- Blend almonds, dates, and salt in a food processor until crumbly and sticky. Press firmly into a pie dish to form the crust.
- In a blender, combine blueberries, coconut milk, maple syrup, and vanilla. Blend until smooth.
- Pour blueberry mixture into a bowl, stir in chia seeds, and let sit for 10 minutes. Pour over crust and refrigerate for at least 4 hours or until set.
