- 2 lbs chicken wings, split
- 1 tbsp baking powder (aluminum-free)
- 1 tbsp cornstarch
- 1 tsp salt
- 2 ripe mangoes, peeled and cubed, divided
- 2–3 habanero peppers, stemmed
- 2 tbsp honey
- 2 tbsp butter
- 1 lime, juiced
- 2 tbsp reserved wing pan drippings or water
Instructions
- Pat wings completely dry. Toss with baking powder, cornstarch, and salt. Spread on a wire rack over a foil-lined sheet pan, uncovered, and refrigerate at least 30 minutes or up to overnight.
- Preheat oven to 425°F. Bake wings on the rack for 40-45 minutes, flipping once, until deeply golden and crisp.
- While wings bake, spread half the mango cubes and the whole habaneros on a separate sheet pan. Broil 4-6 minutes, watching closely, until charred and blistered.
- Blend the charred mango and habaneros with honey, butter, lime juice, and pan drippings until smooth. Taste and adjust heat by adding more or less habanero seed.
- Toss hot wings with half the glaze, spread back on the rack, and broil 2-3 minutes until sticky and caramelized at the edges.
- Toss the broiled wings with remaining glaze, the reserved fresh mango cubes, and a final squeeze of lime. Serve immediately.
Notes
For a milder version, use 1 habanero and swap the rest for a red bell pepper before charring. The dry brine step matters more than the glaze for crispiness – don’t skip it even if you’re short on time. Leftover glaze keeps refrigerated up to 5 days and works well on grilled shrimp or salmon.
