For the Crust:
- 1 cup mashed sweet potato (about 1 medium potato)
- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/4 teaspoon salt
- 1/2 cup chocolate chips
- 1/4 cup chopped walnuts (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a large bowl, mix mashed sweet potato, melted butter, sugar, eggs, and vanilla until well combined.
- Sift in flour, cocoa powder, and salt. Stir until just combined, then fold in chocolate chips and walnuts if using.
- Spread batter evenly into prepared pan and bake for 25-30 minutes until edges are set but center is still slightly soft.
- Let cool completely in pan before slicing into squares.
