For the Crust:

  • 1 cup mashed sweet potato (about 1 medium potato)
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips
  • 1/4 cup chopped walnuts (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, mix mashed sweet potato, melted butter, sugar, eggs, and vanilla until well combined.
  3. Sift in flour, cocoa powder, and salt. Stir until just combined, then fold in chocolate chips and walnuts if using.
  4. Spread batter evenly into prepared pan and bake for 25-30 minutes until edges are set but center is still slightly soft.
  5. Let cool completely in pan before slicing into squares.
