- 1 box 15-ounce (2 sheets) prepared pie pastry or homemade pie dough
- 1 egg
- ¾ pound fresh peaches or 1-pound bag frozen peaches, thawed
- ⅓ cup apricot jam
- 8 ounces créme faîche or plain Greek yogurt
- ¼ cup granulated sugar
- 3 tablespoons pistachios, coarsely chopped
Instructions
- Preheat oven to 375°F. On a floured surface, roll out and cut pastry into 3¼-inch diameter circles. Place on a parchment-lined baking sheet and poke each circle several times with a fork.
- Beat together egg and 1 tablespoon water, brush over each pastry circle, and sprinkle with extra sugar. Bake until golden, about 10 to 12 minutes. Let cool.
- Peel and dice peaches into ¼-inch pieces. Heat apricot jam in microwave until just hot, then strain through a fine sieve to remove large fruit pieces. Gently toss strained jam with diced peaches.
- In a bowl, stir together créme faîche and sugar until smooth. Spread about a tablespoon of the sweetened cream onto each cooled pastry round.
- Top each tart with the glazed peaches and sprinkle with chopped pistachios.
- Serve immediately or chill tarts up to 30 minutes before serving.
Notes
Using prepared pie pastry simplifies the process, but homemade dough can be used for a more rustic texture. The apricot jam glaze adds a beautiful shine and enhances the peach flavor. These tarts are best served chilled or at room temperature.
