  • 4 boneless, skinless chicken breasts, pounded to even thickness
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 cup all-purpose flour
  • 3 tablespoons olive oil, divided
  • 4 Roma tomatoes, diced
  • 3 cloves garlic, minced
  • 1/4 cup fresh basil, chopped, plus more for garnish
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon salt (for tomato mixture)
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons balsamic glaze, for drizzling

Instructions

  1. Season chicken breasts on both sides with salt, pepper, garlic powder, and Italian seasoning. Dredge lightly in flour, shaking off excess.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add chicken and cook 5-6 minutes per side, until golden brown and crispy and internal temperature reaches 165°F. Remove chicken and set aside.
  3. In a bowl, combine diced tomatoes, minced garlic, chopped basil, remaining 1 tablespoon olive oil, balsamic vinegar, and salt. Toss gently to combine.
  4. Reduce heat to medium-low. Return chicken to the skillet and top each piece with shredded mozzarella cheese.
  5. Cover the skillet and cook 2-3 minutes, until cheese is melted.
  6. Spoon the tomato bruschetta mixture generously over each chicken breast.
  7. Drizzle with balsamic glaze and garnish with extra fresh basil before serving.

Notes

Pound chicken breasts to an even thickness so they cook evenly and stay juicy. For extra crispiness, avoid overcrowding the skillet — cook in batches if needed. Leftovers keep well in the fridge for up to 3 days; reheat gently in a skillet to preserve the crispy texture.
