Caramelized Onion and Goat Cheese Puff Pastry Tart

  • 1 sheet puff pastry, thawed
  • 3 tablespoons unsalted butter
  • 4 large yellow onions, thinly sliced
  • 1 teaspoon salt, divided
  • 1 teaspoon sugar
  • 1 tablespoon balsamic vinegar
  • 4 ounces goat cheese, crumbled
  • 2 teaspoons fresh thyme leaves, plus more for garnish
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon olive oil
  • Freshly cracked black pepper, to taste
  • 2 tablespoons honey, for drizzling (optional)

Instructions

  1. Melt the butter with olive oil in a large skillet over medium heat. Add the sliced onions and 1/2 teaspoon salt, stirring to coat.
  2. Cook the onions, stirring occasionally, for 30-35 minutes over medium-low heat until deeply golden and jammy, lowering the heat if they start to brown too quickly.
  3. Stir in the sugar and balsamic vinegar during the last 5 minutes of cooking, then remove from heat and let cool slightly.
  4. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  5. Roll out the puff pastry on the prepared baking sheet and score a border about 1/2 inch from the edges, being careful not to cut all the way through.
  6. Brush the border with beaten egg, then prick the center of the pastry all over with a fork.
  7. Spread the caramelized onions evenly over the center of the pastry, staying inside the scored border.
  8. Scatter the crumbled goat cheese and fresh thyme leaves over the onions, then season with the remaining salt and black pepper.
  9. Bake for 20-25 minutes, until the pastry is puffed and golden brown.
  10. Let the tart cool for 5 minutes, drizzle with honey if desired, garnish with extra thyme, then slice and serve warm.

Notes

Slice the onions uniformly for even caramelizing, and resist the urge to rush the process over high heat — low and slow is key to that deep, jammy sweetness. Leftovers keep in the fridge for up to 2 days and reheat well in a 350°F oven for 8-10 minutes to re-crisp the pastry.
