- 1 cup full-fat small-curd cottage cheese
- 2 tablespoons hot water
- 1 teaspoon lemon juice, plus a little zest
- 1 tablespoon olive oil, plus more for drizzling
- 1 small garlic clove
- 2 thick slices sourdough or crusty bread
- Salt and black pepper, to taste
- Toppings: chili crisp, flaky salt, everything bagel seasoning, or honey
Instructions
- Set the oven to broil (high) and position a rack about 6 inches from the heat.
- In a blender or food processor, blitz the cottage cheese, hot water, lemon juice, olive oil, and a pinch of salt until completely smooth, no curds visible, about 30-45 seconds. Scrape down and blend again if needed.
- Toast the bread until deeply golden, then rub the surface with the cut side of the garlic clove.
- Spread the whipped cottage cheese thickly over each slice, all the way to the edges, and place on a baking sheet.
- Broil for 2-3 minutes, watching closely, until the top is blistered and browned in spots.
- Top immediately with chili crisp and flaky salt, or your topping of choice, and serve while warm.
Notes
Full-fat small-curd cottage cheese blends smoothest; low-fat can turn gummy. No blender? Mash hard with a fork and hot water — it’ll get close enough. Add sweet toppings like honey after broiling so they don’t scorch. Leftover whipped base (unbroiled) keeps in the fridge for 3 days.
