Baked Brie with Fig Jam and Rosemary

A warm wheel of brie baked until gooey, topped with sweet fig jam, fresh rosemary, honey, and toasted walnuts.

Ingredients

  • 1 wheel (8 oz) brie cheese
  • 1/3 cup fig jam or preserves
  • 1 tablespoon fresh rosemary, chopped, plus extra sprigs for garnish
  • 2 tablespoons toasted walnuts, chopped
  • 1 tablespoon honey
  • 1 teaspoon olive oil
  • Pinch of flaky sea salt
  • Crusty baguette slices, crackers, or sliced apples, for serving

Instructions

  1. Preheat the oven to 375°F (190°C). Line a small baking dish or cast iron skillet with parchment paper.
  2. Place the brie wheel in the prepared dish. Using a sharp knife, score the top rind in a crosshatch pattern, being careful not to cut all the way through.
  3. Drizzle the brie with olive oil, then spoon the fig jam evenly over the top, letting it settle into the scored lines.
  4. Sprinkle half of the chopped rosemary over the jam.
  5. Bake for 12–15 minutes, or until the brie is soft and the center feels squishy when gently pressed (it should not fully collapse).
  6. Remove from the oven and immediately top with toasted walnuts, remaining rosemary, and a drizzle of honey.
  7. Finish with a pinch of flaky sea salt and garnish with fresh rosemary sprigs.
  8. Serve warm with baguette slices, crackers, or apple slices for dipping.

Notes

For a stronger rosemary flavor, tuck a few whole sprigs under the brie before baking. Leftover baked brie can be refrigerated and gently reheated in a low oven, though it’s best enjoyed fresh. Swap fig jam for apricot or cranberry preserves for a seasonal twist.
