- 1 ½ cups all-purpose flour
- ¾ cup granulated sugar
- ½ cup buttermilk
- 1/3 cup vegetable oil
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1 ½ tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- 1 ¼ cups finely chopped apples
Instructions
- Preheat oven to 375°F and line a muffin tin.
- Whisk flour, sugar, baking powder, soda, salt, and cinnamon.
- In another bowl, whisk egg, buttermilk, oil, and vanilla.
- Combine wet and dry ingredients gently; don’t overmix.
- Fold in chopped apples evenly.
- Divide batter among 12 muffin cups.
- Bake for 18–22 minutes until tops are golden and set.
- Cool in pan 5 minutes, then move to rack.
