Apple Cider Quick Bread

A moist, one-bowl apple cider quick bread swirled with cinnamon-sugar and topped with a sweet vanilla glaze.

Ingredients

  • 1 1/2 cups unfiltered apple cider
  • 1/2 cup unsalted butter
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 2 large eggs
  • 3/4 cup packed brown sugar
  • 1/3 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 2 tablespoons granulated sugar, for the swirl
  • 1/2 teaspoon cinnamon, for the swirl
  • 1 cup powdered sugar
  • 2 to 3 tablespoons reduced apple cider or milk, for the glaze

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a small saucepan, simmer the apple cider over medium heat until reduced to about 1/3 cup, 15 to 20 minutes. Set aside 2 tablespoons for the glaze and let the rest cool slightly.
  3. Melt the butter in a skillet over medium heat, swirling until it turns golden brown and smells nutty, 3 to 4 minutes. Remove from heat and let cool slightly.
  4. In a bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  5. In a large bowl, whisk the eggs and brown sugar until smooth. Whisk in the browned butter, reduced cider, applesauce, and vanilla.
  6. Fold the dry ingredients into the wet ingredients just until combined.
  7. Pour half the batter into the prepared pan. Mix the granulated sugar and cinnamon for the swirl and sprinkle half over the batter, then repeat with the remaining batter and swirl mixture. Drag a knife through the batter to create a marbled swirl.
  8. Bake for 50 to 60 minutes, until a toothpick inserted in the center comes out clean.
  9. Cool the bread in the pan for 15 minutes, then transfer to a wire rack to cool completely.
  10. Whisk the powdered sugar with the reserved reduced cider until smooth, adding more liquid as needed for a drizzling consistency. Drizzle over the cooled loaf before slicing.

Notes

Use unfiltered, high-quality apple cider for the deepest flavor — reducing it is what makes this bread taste so intensely of apples. Store leftovers wrapped at room temperature for up to 3 days or freeze for up to 3 months.
