- 1 lb smoked sausage, sliced into 1/2-inch rounds
- 1 lb baby potatoes, halved
- 2 bell peppers, cut into 1-inch chunks
- 1 red onion, cut into wedges
- 3 tablespoons olive oil
- Salt and black pepper, to taste
Instructions
- Preheat oven to 425°F (220°C) and line a large sheet pan with parchment paper.
- In a large bowl, toss the potatoes with 2 tablespoons of olive oil, salt, and pepper. Spread onto the sheet pan.
- Roast the potatoes alone for 10 minutes to give them a head start.
- Meanwhile, toss the sausage, bell peppers, and red onion with the remaining olive oil, salt, and pepper.
- Remove the pan from the oven, add the sausage and vegetable mixture, and spread everything into a single layer.
- Roast for another 20-25 minutes, stirring once halfway through, until the potatoes are fork-tender and the sausage is browned at the edges.
- Serve hot, straight from the pan.
Notes
Cut potatoes smaller than the other vegetables so everything finishes cooking at the same time. Avoid overcrowding the pan for the best caramelization — use two pans if needed. Swap in zucchini, broccoli, or carrots based on what you have on hand.
