Zucchini Grilled Cheese – Easy Recipe for Lunch

A delicious twist on the classic grilled cheese sandwich with added zucchini for extra flavor and nutrition.

For the Crust:

  • 4 slices of bread
  • 1 medium zucchini, thinly sliced
  • 1 cup shredded cheddar cheese
  • 2 tablespoons butter, softened
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Heat a skillet over medium heat.
  2. Butter one side of each bread slice and sprinkle with garlic powder.
  3. Layer cheese and zucchini slices between two slices of bread, buttered sides facing out.
  4. Place the sandwich in the skillet and cook for 3-4 minutes per side, until golden brown and cheese is melted.
  5. Repeat with the remaining ingredients.
  6. Serve hot and enjoy!
