Zesty Cranberry Orange Cookies with Sweet Citrus Glaze

For the Crust:

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tablespoon orange zest
  • 1/4 cup orange juice
  • 1 cup dried cranberries
  • 1 cup powdered sugar
  • 2 tablespoons orange juice (for glaze)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg, orange zest, and orange juice.
  4. Gradually mix in the dry ingredients until just combined. Fold in dried cranberries.
  5. Drop tablespoon-sized dough onto the prepared baking sheet, spacing them 2 inches apart.
  6. Bake for 10-12 minutes or until edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
  7. For the glaze, whisk powdered sugar and orange juice until smooth. Drizzle over cooled cookies.
