For the Crust:
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tablespoon orange zest
- 1/4 cup orange juice
- 1 cup dried cranberries
- 1 cup powdered sugar
- 2 tablespoons orange juice (for glaze)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg, orange zest, and orange juice.
- Gradually mix in the dry ingredients until just combined. Fold in dried cranberries.
- Drop tablespoon-sized dough onto the prepared baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes or until edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
- For the glaze, whisk powdered sugar and orange juice until smooth. Drizzle over cooled cookies.
