White Sweet Potato and Honey Garlic Sausages

For the Crust:

  • 4 honey garlic sausages
  • 2 large white sweet potatoes, peeled and cubed
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tbsp honey
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss sweet potato cubes with 1 tbsp olive oil, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender.
  2. While potatoes roast, heat remaining olive oil in a skillet over medium heat. Add sausages and cook for 6-8 minutes, turning occasionally, until browned and cooked through.
  3. Reduce heat to low. Add minced garlic to the skillet and cook for 30 seconds until fragrant. Stir in honey and cook for 1 minute until sausages are glazed. Add roasted sweet potatoes and toss to combine. Garnish with fresh parsley before serving.

You can customize the seasonings to taste.
