For the Crust:
- 4 honey garlic sausages
- 2 large white sweet potatoes, peeled and cubed
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 2 tbsp honey
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss sweet potato cubes with 1 tbsp olive oil, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender.
- While potatoes roast, heat remaining olive oil in a skillet over medium heat. Add sausages and cook for 6-8 minutes, turning occasionally, until browned and cooked through.
- Reduce heat to low. Add minced garlic to the skillet and cook for 30 seconds until fragrant. Stir in honey and cook for 1 minute until sausages are glazed. Add roasted sweet potatoes and toss to combine. Garnish with fresh parsley before serving.
