White Sweet Potato and Honey Garlic Sausages

For the Crust:

  • 4 honey garlic sausages
  • 2 large white sweet potatoes, peeled and cubed
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon honey
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium heat. Add sausages and cook until browned on all sides, about 5-7 minutes. Remove and set aside.
  2. In the same skillet, add diced onion and cook until softened, about 3 minutes. Add minced garlic and cook for another minute.
  3. Add cubed white sweet potatoes to the skillet. Season with thyme, salt, and pepper. Cook for 10-12 minutes, stirring occasionally, until potatoes are tender.
  4. Slice the cooked sausages into rounds and return them to the skillet. Drizzle honey over the mixture and stir to combine. Cook for another 2-3 minutes until everything is heated through.
  5. Garnish with fresh parsley before serving.
