Soft Chewy White Chocolate Raspberry Cookies

These cookies feature soft, chewy centers with melted white chocolate and bursts of tangy raspberry for a perfect sweet-tart combination.

For the Crust:

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup white chocolate chips
  • 3/4 cup freeze-dried raspberries, crushed
  • 1/2 teaspoon salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper
  2. Whisk together flour, baking soda, and salt in a medium bowl
  3. Cream butter and both sugars until light and fluffy, then beat in eggs and vanilla
  4. Gradually mix in dry ingredients until just combined
  5. Fold in white chocolate chips and crushed freeze-dried raspberries
  6. Drop rounded tablespoons of dough onto baking sheets, spacing 2 inches apart
  7. Bake for 10-12 minutes until edges are golden but centers remain soft
  8. Let cool on baking sheet for 5 minutes before transferring to wire rack
