White Chocolate Raspberry Cookies

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups white chocolate chunks
  • 1 cup fresh or frozen raspberries, chopped

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour and baking soda. Set aside.
  3. In a large bowl, cream together butter, granulated sugar, and brown sugar until smooth. Beat in eggs and vanilla.
  4. Gradually blend in flour mixture. Fold in white chocolate chunks and raspberries.
  5. Drop rounded tablespoons of dough onto prepared baking sheets. Bake for 10-12 minutes or until edges are golden.
