White Chocolate Raspberry Cheesecake Balls

Creamy no-bake cheesecake balls with a hint of raspberry, coated in white chocolate for an elegant and easy dessert.

For the Crust:

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup crushed graham crackers
  • 1/4 cup seedless raspberry jam
  • 8 oz white chocolate, chopped
  • 1 tbsp coconut oil
  • Freeze-dried raspberries, for garnish

Instructions

1. Prepare the Crust:

  1. In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  2. Stir in crushed graham crackers and raspberry jam until well combined.
  3. Chill mixture for 1 hour, then roll into 1-inch balls and place on a parchment-lined tray. Freeze for 30 minutes.
  4. Melt white chocolate with coconut oil, then dip each ball to coat. Sprinkle with crushed freeze-dried raspberries before chocolate sets.
  5. Refrigerate until firm, about 1 hour, before serving.
