White Chocolate Blueberry Cheesecake

A creamy, decadent cheesecake with a white chocolate base and a sweet blueberry swirl topping.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 8 oz white chocolate, melted and cooled
  • 1 cup fresh blueberries
  • 1/4 cup blueberry jam

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into a 9-inch springform pan.
  2. Beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then vanilla and melted white chocolate. Pour over crust.
  3. Swirl blueberry jam and fresh blueberries into the batter. Bake for 45-50 minutes until set. Cool completely before refrigerating for at least 4 hours.

Notes

You can customize the seasonings to taste.
