Velvety No Bake Lemon Tart

Ingredients

  • 200g digestive biscuits, crushed
  • 100g unsalted butter, melted
  • 1 can (397g) sweetened condensed milk
  • 3 large lemons, juiced and zested
  • 300ml double cream
  • 2 tbsp icing sugar
  • Fresh berries for garnish

Instructions

  1. Mix crushed biscuits with melted butter and press firmly into a tart tin. Chill for 15 minutes.
  2. Whisk condensed milk, lemon juice, and zest in a bowl until thickened. In another bowl, whip cream and icing sugar to soft peaks.
  3. Fold lemon mixture into whipped cream until smooth. Pour over the chilled base and spread evenly.
  4. Refrigerate for at least 4 hours or until set. Garnish with fresh berries before serving.
