- 200g digestive biscuits, crushed
- 100g unsalted butter, melted
- 1 can (397g) sweetened condensed milk
- 3 large lemons, juiced and zested
- 300ml double cream
- 2 tbsp icing sugar
- Fresh berries for garnish
Instructions
- Mix crushed biscuits with melted butter and press firmly into a tart tin. Chill for 15 minutes.
- Whisk condensed milk, lemon juice, and zest in a bowl until thickened. In another bowl, whip cream and icing sugar to soft peaks.
- Fold lemon mixture into whipped cream until smooth. Pour over the chilled base and spread evenly.
- Refrigerate for at least 4 hours or until set. Garnish with fresh berries before serving.
