Vanilla Bean Crème Brûlée Cheesecake Cupcakes

A decadent fusion of creamy cheesecake and classic crème brûlée, topped with a caramelized sugar crust.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 vanilla bean, seeds scraped
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 1/4 cup granulated sugar (for topping)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F. Line a muffin tin with cupcake liners.
  2. Mix graham cracker crumbs and melted butter. Press 1 tbsp into each liner.
  3. Beat cream cheese, sugar, and vanilla seeds until smooth. Add eggs one at a time.
  4. Stir in sour cream and heavy cream. Divide batter over crusts.
  5. Bake for 20-25 minutes until set. Cool completely, then chill for 2 hours.
  6. Sprinkle tops with sugar and caramelize with a kitchen torch.
