Vanilla Bean Crème Brûlée Cheesecake Cupcakes

A delightful fusion of creamy cheesecake and classic crème brûlée, topped with a caramelized sugar crust.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 vanilla bean, seeds scraped
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 1/4 cup granulated sugar (for topping)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F. Line a muffin tin with cupcake liners.
  2. Mix graham cracker crumbs and melted butter. Press into liners to form crusts.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla bean seeds, sour cream, and vanilla extract.
  4. Divide batter evenly among liners. Bake for 20-25 minutes until set. Cool completely, then chill for 4 hours.
  5. Sprinkle tops with sugar and caramelize with a kitchen torch until golden and crisp.
