For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1/2 cup sour cream
- Food coloring (pink, blue, purple, yellow)
- Whipped cream for topping
- Sprinkles for decoration
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Mix graham cracker crumbs and melted butter, then press into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each. Stir in sour cream.
- Divide the batter into 4 bowls. Add a different food coloring to each bowl and mix until vibrant.
- Drop spoonfuls of each colored batter onto the crust. Use a knife to gently swirl the colors together.
- Bake for 45-50 minutes until the center is set. Let cool, then refrigerate for at least 4 hours.
- Top with whipped cream and sprinkles before serving.
