  • 2 tablespoons freshly squeezed lemon juice
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh parsley
  • 1/4 cup finely chopped red onion
  • Salt and pepper to taste
  • Optional: 1/4 cup chopped celery or bell peppers for crunch

Instructions

  1. In a medium bowl, combine Greek yogurt, grated cucumber, lemon juice, garlic, dill, parsley, salt, and pepper. Stir until well combined.
  2. Add shredded chicken and finely chopped red onion to the bowl and mix until the chicken is evenly coated with the tzatziki sauce.
  3. If desired, fold in chopped celery or bell peppers for added crunch.
  4. Cover and chill the salad in the refrigerator for at least 30 minutes to allow flavors to meld.
  5. Serve chilled, either on its own, in a pita, over greens, or with crackers.

Notes

Use thick, plain Greek yogurt to avoid a watery salad. Strain the cucumber well to prevent sogginess. Rotisserie chicken saves time and adds flavor. Chilling the salad enhances the flavor. Adding celery or bell peppers adds a nice crunch.
