- 2 cups cooked shredded chicken (rotisserie chicken recommended)
- 3/4 cup thick plain Greek yogurt
- 1/2 cup grated cucumber, squeezed dry
- 2 tablespoons freshly squeezed lemon juice
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh dill
- 2 tablespoons chopped fresh parsley
- 1/4 cup finely chopped red onion
- Salt and pepper to taste
- Optional: 1/4 cup chopped celery or bell peppers for crunch
Instructions
- In a medium bowl, combine Greek yogurt, grated cucumber, lemon juice, garlic, dill, parsley, salt, and pepper. Stir until well combined.
- Add shredded chicken and finely chopped red onion to the bowl and mix until the chicken is evenly coated with the tzatziki sauce.
- If desired, fold in chopped celery or bell peppers for added crunch.
- Cover and chill the salad in the refrigerator for at least 30 minutes to allow flavors to meld.
- Serve chilled, either on its own, in a pita, over greens, or with crackers.
Notes
Use thick, plain Greek yogurt to avoid a watery salad. Strain the cucumber well to prevent sogginess. Rotisserie chicken saves time and adds flavor. Chilling the salad enhances the flavor. Adding celery or bell peppers adds a nice crunch.
