Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, dark brown sugar, and granulated sugar until smooth and fluffy.
- Add the vanilla extract and eggs, mixing well to combine.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the caramel bits, chocolate chunks, and chopped pecans evenly into the dough.
- Use a cookie scoop to form dough balls about 1 tablespoon each and place them on a parchment-lined baking sheet, spacing them about 2 inches apart.
- Bake for 9-11 minutes or until the edges are set but the centers remain soft.
- Allow cookies to cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
Notes
For best flavor, toast the pecans lightly before adding to the dough. Press additional caramel bits, chocolate chunks, and pecans on top of the dough balls before baking for extra texture and appearance. These cookies are best enjoyed slightly warm to savor the gooey caramel.
