Turtle Caramel Pecan Brownie Cookies

Decadent brownie-like cookies loaded with caramel, pecans, and chocolate for a rich turtle-inspired treat.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans
  • 1/2 cup caramel bits or chopped soft caramels
  • 1/2 cup semi-sweet chocolate chips

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In a separate bowl, mix melted butter and sugar until combined. Add eggs and vanilla, stirring until smooth.
  4. Gradually fold in the dry ingredients until just combined. Stir in pecans, caramel bits, and chocolate chips.
  5. Drop tablespoon-sized portions of dough onto prepared baking sheets, spacing 2 inches apart.
  6. Bake for 10-12 minutes until edges are set but centers are still soft. Let cool on baking sheets for 5 minutes before transferring to a wire rack.
