For the Crust:
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 1/2 cup milk
- 1 large egg
- 1 tsp vanilla extract
- 1 cup fresh pineapple, finely diced
- Vegetable oil for frying
- Powdered sugar for dusting
Instructions
1. Prepare the Crust:
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, mix milk, egg, and vanilla extract until well combined. Pour wet ingredients into dry ingredients and stir until just combined.
- Gently fold in diced pineapple. Let batter rest for 5 minutes.
- Heat 2 inches of vegetable oil in a deep skillet to 350°F (175°C).
- Drop tablespoon-sized portions of batter into hot oil. Fry for 2-3 minutes per side until golden brown.
- Remove fritters with a slotted spoon and drain on paper towels. Dust with powdered sugar before serving.
