For the Crust:

  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups light brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup butterscotch chips

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. In a large bowl, mix melted butter and brown sugar until smooth.
  3. Beat in eggs one at a time, then stir in vanilla.
  4. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients, mixing until just combined.
  5. Fold in butterscotch chips, then spread the batter evenly into the prepared pan.
  6. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let cool before cutting into bars.
