For the Crust:
- 1 cup (2 sticks) unsalted butter, melted
- 2 cups light brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup butterscotch chips
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- In a large bowl, mix melted butter and brown sugar until smooth.
- Beat in eggs one at a time, then stir in vanilla.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients, mixing until just combined.
- Fold in butterscotch chips, then spread the batter evenly into the prepared pan.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let cool before cutting into bars.
