Triple Layer Strawberry Cake

A stunning three-layer strawberry cake with fresh strawberries and creamy frosting, perfect for special occasions.

For the Crust:

  • 2 1/2 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup whole milk
  • 1 1/2 cups fresh strawberries, pureed
  • 3 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • Fresh strawberries for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then vanilla.
  4. Alternately add flour mixture and milk to the butter mixture, beginning and ending with flour. Fold in strawberry puree.
  5. Divide batter evenly among pans. Bake for 25-30 minutes or until a toothpick comes out clean. Cool completely.
  6. For frosting, whip heavy cream, powdered sugar, and vanilla until stiff peaks form.
  7. Assemble cake by layering cake rounds with frosting and fresh strawberry slices. Frost the outside and garnish with strawberries.
