For the Crust:
- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 2 tablespoons olive oil
- 1 large onion, sliced
- 8 oz mushrooms, sliced
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup chicken broth
Instructions
1. Prepare the Crust:
- Season chicken breasts with salt, pepper, garlic powder, and paprika.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-6 minutes per side until golden brown and cooked through. Remove chicken and set aside.
- In the same skillet, add onions and mushrooms. Sauté until softened, about 5 minutes.
- Pour in chicken broth and scrape up any browned bits from the bottom of the pan. Simmer for 2 minutes.
- Return chicken to the skillet. Top with cheddar and Monterey Jack cheeses.
- Cover and let cook for 2-3 minutes until cheese is melted. Serve hot.
