For the Crust:
- 4 large bell peppers (any color)
- 1 lb ground chicken
- 1 cup diced pineapple
- 1/2 cup teriyaki sauce
- 1/2 cup cooked rice
- 1/4 cup chopped green onions
- 1 tsp minced garlic
- 1 tsp grated ginger
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds and membranes. Place them in a baking dish.
- In a skillet, heat olive oil over medium heat. Add garlic and ginger, sauté for 30 seconds.
- Add ground chicken and cook until no longer pink. Stir in teriyaki sauce, pineapple, rice, and green onions. Season with salt and pepper.
- Spoon the chicken mixture into the bell peppers. Cover the baking dish with foil and bake for 25-30 minutes until peppers are tender.
- Remove foil and bake for an additional 5 minutes. Serve warm.
