For the Crust:
- 2 boneless, skinless chicken breasts, diced
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 cup carrots, sliced
- 1 cup white rice, uncooked
- 1/2 cup teriyaki sauce
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon sesame oil
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- 1/2 teaspoon black pepper
- 1 tablespoon sesame seeds (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a large bowl, combine diced chicken, broccoli, bell pepper, carrots, and uncooked rice.
- In a separate bowl, whisk together teriyaki sauce, soy sauce, honey, sesame oil, garlic powder, ginger powder, and black pepper.
- Pour the sauce mixture over the chicken and vegetables, stirring to coat evenly.
- Transfer the mixture to the prepared baking dish and cover tightly with aluminum foil.
- Bake for 25-30 minutes, or until the chicken is cooked through and the rice is tender.
- Remove from oven, sprinkle with sesame seeds if desired, and serve hot.
