For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 2 tbsp sugar
- 8 oz cream cheese, softened
- 1/2 cup sweetened condensed milk
- 1/4 cup fresh lime juice
- 1 tbsp lime zest
- 1 tsp vanilla extract
- Whipped cream for garnish (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press mixture firmly into the bottom of each liner.
- Bake crusts for 5 minutes, then remove and let cool.
- In another bowl, beat cream cheese until smooth. Add condensed milk, lime juice, lime zest, and vanilla extract. Mix until well combined.
- Spoon filling over cooled crusts. Refrigerate for at least 2 hours or until set.
- Garnish with whipped cream and additional lime zest if desired before serving.

You can customize the seasonings to taste.
