  • 3/4 cup canola oil

  • 1 teaspoon nutmeg
  • 1/3 cup chopped pecans
  • 1 cup powdered sugar
  • 34 tablespoons milk
  • 1/4 cup chopped pecans (for icing)

Instructions

  1. Preheat oven to 350°F.
  2. In a medium mixing bowl, stir together yellow cake mix, sour cream, lightly beaten eggs, oil, and vanilla extract.
  3. Add mashed sweet potatoes and stir well.
  4. Pour half of the batter into a lightly greased 9 x 13-inch baking dish.
  5. In a small bowl, mix brown sugar, cinnamon, and nutmeg. Stir in chopped pecans.
  6. Sprinkle the brown sugar mixture evenly over the batter in the pan.
  7. Spoon the remaining batter on top and use a butter knife to swirl the layers together.
  8. Bake uncovered for 40 to 45 minutes or until a toothpick inserted in the center comes out clean.
  9. For the icing, combine powdered sugar and milk one tablespoon at a time, stirring until smooth and drizzleable.
  10. Drizzle the icing over the warm cake and sprinkle with chopped pecans.
  11. Allow icing to set before serving.
