			For the Crust:
- 1 (9-inch) pre-made pie crust
- 1 cup mashed sweet potatoes
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup heavy cream
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Place the pie crust in a 9-inch pie dish and crimp the edges.
- In a large bowl, beat the cream cheese until smooth. Add granulated sugar and brown sugar, mixing until well combined.
- Add the mashed sweet potatoes, eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix until fully incorporated.
- Gradually add the heavy cream, mixing until the filling is smooth and creamy.
- Pour the filling into the prepared pie crust and smooth the top with a spatula.
- Bake for 45-50 minutes, or until the center is set but still slightly jiggly.
- Allow the pie to cool completely at room temperature, then refrigerate for at least 4 hours before serving.
