For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp unsalted butter, melted
- 1 lb sweet potatoes, cooked and mashed
- 16 oz cream cheese, softened
- 3/4 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/4 tsp salt
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C).
- Mix graham cracker crumbs, granulated sugar, and melted butter. Press into a 9-inch pie dish and bake for 8 minutes. Let cool.
- In a bowl, beat cream cheese and brown sugar until smooth. Add mashed sweet potatoes, eggs, vanilla, cinnamon, nutmeg, ginger, and salt. Mix until well combined.
- Pour filling into the crust and bake for 35-40 minutes until set. Let cool completely before serving.
