Sweet Potato Cheesecake Pie

A creamy and spiced sweet potato cheesecake pie with a buttery graham cracker crust.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tbsp unsalted butter, melted
  • 1 lb sweet potatoes, cooked and mashed
  • 16 oz cream cheese, softened
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs, granulated sugar, and melted butter. Press into a 9-inch pie dish and bake for 8 minutes. Let cool.
  3. In a bowl, beat cream cheese and brown sugar until smooth. Add mashed sweet potatoes, eggs, vanilla, cinnamon, nutmeg, ginger, and salt. Mix until well combined.
  4. Pour filling into the crust and bake for 35-40 minutes until set. Let cool completely before serving.

Notes

You can customize the seasonings to taste.
