Sweet Potato Cheesecake Pie

A creamy and spiced sweet potato cheesecake filling in a buttery graham cracker crust, perfect for holiday gatherings or any special occasion.

For the Crust:

  • 1 (9-inch) graham cracker pie crust
  • 1 (8 oz) package cream cheese, softened
  • 1 cup cooked and mashed sweet potatoes
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, beat cream cheese until smooth. Add mashed sweet potatoes, granulated sugar, and brown sugar; mix until well combined.
  3. Beat in eggs one at a time, then stir in heavy cream, vanilla extract, cinnamon, nutmeg, ginger, and salt until smooth.
  4. Pour filling into the graham cracker crust and smooth the top.
  5. Bake for 40-45 minutes, or until the center is set but still slightly jiggly. Allow to cool completely, then refrigerate for at least 4 hours before serving.
