For the Crust:
- 1 (9-inch) graham cracker pie crust
- 1 (8 oz) package cream cheese, softened
- 1 cup cooked and mashed sweet potatoes
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C).
- In a large bowl, beat cream cheese until smooth. Add mashed sweet potatoes, granulated sugar, and brown sugar; mix until well combined.
- Beat in eggs one at a time, then stir in heavy cream, vanilla extract, cinnamon, nutmeg, ginger, and salt until smooth.
- Pour filling into the graham cracker crust and smooth the top.
- Bake for 40-45 minutes, or until the center is set but still slightly jiggly. Allow to cool completely, then refrigerate for at least 4 hours before serving.
