For the Crust:
- 1 cup mashed sweet potato (about 1 medium)
- 1/2 cup almond butter
- 1/3 cup maple syrup
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup cocoa powder
- 1/4 cup almond flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup dark chocolate chips
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a large bowl, mix mashed sweet potato, almond butter, maple syrup, eggs, and vanilla until smooth.
- Add cocoa powder, almond flour, baking powder, and salt. Stir until well combined.
- Fold in dark chocolate chips, then pour batter into the prepared pan.
- Bake for 25-30 minutes or until a toothpick comes out with moist crumbs. Let cool before slicing.
