Sweet Potato Brownies

Fudgy, rich brownies made with nutrient-packed sweet potatoes for a healthier twist on a classic dessert.

For the Crust:

  • 1 cup mashed sweet potato (about 1 medium)
  • 1/2 cup almond butter
  • 1/3 cup maple syrup
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup cocoa powder
  • 1/4 cup almond flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, mix mashed sweet potato, almond butter, maple syrup, eggs, and vanilla until smooth.
  3. Add cocoa powder, almond flour, baking powder, and salt. Stir until well combined.
  4. Fold in dark chocolate chips, then pour batter into the prepared pan.
  5. Bake for 25-30 minutes or until a toothpick comes out with moist crumbs. Let cool before slicing.
