Mom’s Old Fashioned Swedish Apple Cake

A rich and moist Swedish apple cake with warm cinnamon and nutmeg flavors, topped with a buttery caramel sauce. This dessert combines the best of apple pie and apple cake.

Ingredients

  • 1/2 cup unsalted butter, room temperature (1 stick)
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 3 cups chopped and peeled apples (small chunks, about 2 1/2 medium apples)
  • 1/2 cup roughly chopped pecans
  • 1 1/2 cups light brown sugar, lightly packed (for caramel topping)
  • 2 tbsp milk or half and half (for caramel topping)
  • 3 tbsp butter (for caramel topping)

Instructions

  1. Preheat oven to 350°F and grease a 9-inch springform pan.
  2. In a large bowl, beat butter and sugar until smooth.
  3. Add eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, sift together flour, salt, baking soda, nutmeg, and cinnamon.
  5. Gradually add dry ingredients to the wet mixture and mix until just combined.
  6. Fold in chopped apples and pecans.
  7. Pour batter into prepared pan and bake for 35-40 minutes.
  8. While cake bakes, prepare caramel topping by combining brown sugar, milk, and butter in a saucepan over medium-low heat; stir until smooth and combined.
  9. Remove cake from oven and pour caramel topping evenly over the cake.
  10. Return cake to oven and bake an additional 10-15 minutes until caramel is crackling and cake is cooked through.
  11. Allow cake to cool at least 15 minutes before slicing and serving.

Notes

Use tart apples for best flavor. The caramel topping adds a rich, buttery sweetness that complements the spices and apples perfectly. Let the cake cool to allow the caramel to set for easier slicing.
