- 1/2 cup unsalted butter, room temperature (1 stick)
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour

- 3 cups chopped and peeled apples (small chunks, about 2 1/2 medium apples)
- 1/2 cup roughly chopped pecans
- 1 1/2 cups light brown sugar, lightly packed (for caramel topping)
- 2 tbsp milk or half and half (for caramel topping)
- 3 tbsp butter (for caramel topping)
Instructions
- Preheat oven to 350°F and grease a 9-inch springform pan.
- In a large bowl, beat butter and sugar until smooth.
- Add eggs one at a time, then stir in vanilla extract.
- In a separate bowl, sift together flour, salt, baking soda, nutmeg, and cinnamon.
- Gradually add dry ingredients to the wet mixture and mix until just combined.
- Fold in chopped apples and pecans.
- Pour batter into prepared pan and bake for 35-40 minutes.
- While cake bakes, prepare caramel topping by combining brown sugar, milk, and butter in a saucepan over medium-low heat; stir until smooth and combined.
- Remove cake from oven and pour caramel topping evenly over the cake.
- Return cake to oven and bake an additional 10-15 minutes until caramel is crackling and cake is cooked through.
- Allow cake to cool at least 15 minutes before slicing and serving.
Notes
Use tart apples for best flavor. The caramel topping adds a rich, buttery sweetness that complements the spices and apples perfectly. Let the cake cool to allow the caramel to set for easier slicing.
