Swedish Apple Cake

A moist and tender apple cake with a hint of cardamom, topped with pearl sugar for a delightful crunch.

For the Crust:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1 tsp ground cardamom
  • 1/2 tsp salt
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup milk
  • 2 medium apples, peeled and diced
  • 2 tbsp pearl sugar

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, cardamom, and salt.
  3. In another bowl, beat eggs, then mix in melted butter and milk. Pour wet ingredients into dry ingredients and stir until just combined.
  4. Fold in diced apples. Pour batter into prepared pan and sprinkle pearl sugar evenly on top.
  5. Bake for 30-35 minutes, or until a toothpick inserted comes out clean. Let cool before serving.

You can customize the seasonings to taste.
