Summer Berry and Peach Cheesecake

A refreshing no-bake cheesecake with a buttery graham cracker crust, creamy filling, and topped with fresh summer berries and peaches.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup fresh mixed berries (strawberries, blueberries, raspberries)
  • 1 large peach, sliced
  • 1 tbsp honey (optional)

Instructions

1. Prepare the Crust:

  1. Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press firmly into the bottom of a 9-inch springform pan. Chill for 15 minutes.
  2. In a large bowl, beat cream cheese until smooth. Add sour cream, powdered sugar, and vanilla, mixing until well combined.
  3. Spread the cream cheese mixture over the chilled crust. Smooth the top with a spatula.
  4. Arrange the mixed berries and peach slices on top of the cheesecake. Drizzle with honey if desired.
  5. Refrigerate for at least 4 hours or overnight before serving.

Notes

You can customize the seasonings to taste.
