For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup fresh mixed berries (strawberries, blueberries, raspberries)
- 1 large peach, sliced
- 1 tbsp honey (optional)
Instructions
1. Prepare the Crust:
- Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press firmly into the bottom of a 9-inch springform pan. Chill for 15 minutes.
- In a large bowl, beat cream cheese until smooth. Add sour cream, powdered sugar, and vanilla, mixing until well combined.
- Spread the cream cheese mixture over the chilled crust. Smooth the top with a spatula.
- Arrange the mixed berries and peach slices on top of the cheesecake. Drizzle with honey if desired.
- Refrigerate for at least 4 hours or overnight before serving.
